Arrowroot - 1 Tbsp 1-1/2 Tbsp flour or 2-1/4 cornstarch
Baking Powder - 1 tsp 1/4 tsp baking soda + 5/8 tsp cream of tartar OR 1/4 tsp baking soda + 1/2 cup butter milk or sour milk
(reduce liquid in recipe by 1/4 cup)
Bread crumbs - 1 cup Cracker crumbs 3/4 to 1 cup
Butter - 1 cup Vegetable oil, scant less than 1 cup
Buttermilk or Sour Milk - 1 cup 1 cup plain yogurt OR 1 Tbsp vinegar or lemon juice + milk to 1 cup (let stand 5 minutes) OR 1-3/4 tsp cream of tartar + 1 cup milk
Cake flour - 1 cup All-purpose flour, 1 cup minus 2 tablespoons

Coconut, grated - 1 cup 1-1/3 cups flaked coconut
Coconut Milk, Fresh - 1 cup 3 Tbsp canned cream of coconut + hot water or lowfat milk to 1 cup
Cornstarch - 1 Tbsp 2 Tbsp flour OR 2 tsp arrowroot
Corn Syrup, Dark - 1 cup 3/4 light corn syrup + 1/4 cup light molasses OR 1-1/4 cups brown sugar + 1/4 cup water
Corn Syrup, Light or Dark - 1 cup 1-1/4 cups sugar or packed brown sugar + 1/4 cup liquid called for in recipe
Cracker crumbs - 3/4 cup 1 cup bread crumbs
Cream, Half-and-Half - 1 cup 1-1/2 Tbsp butter + whole milk to 1 cup OR 1/2 cup light cream + 1/2 cup whole milk
Cream, Light (20% fat) - 1 cup 3 Tbsp butter + whole milk to 1 cup
Cream, Sour - 1 cup 1 cup plain yogurt OR 3/4 cup sour milk, buttermilk or plain yogurt + 1/3 cup butter OR 1 Tbsp lemon juice + evaporated whole milk to 1 cup
Cream, Whipping (36-40% fat) - 1 cup 3/4 cup whole milk + 1/3 cup butter OR 13 oz. chilled evaporated milk + 1 tsp lemon juice
Garlic - 1 small clove 1/8 tsp garlic powder
Ginger, Fresh - 1 Tbsp chopped 1/8 tsp powdered ginger
Herbs, Fresh - 1 Tbsp Dried herbs 1/2 to 3/4 tsp
Honey - 1 cup 1-1/4 cups sugar + 1/4 cup liquid called for in recipe
